I vowed we wouldn't have a gas barbecue - that burning charcoal was the only way. Then I went to a friend's for a meal and to my amazement, her husband didn't need to light the barbecue almost two hours before we were going to eat! The food was cooked, and not just on the outside, it wasn't all dished up at the same time looking charred and what's more, it kept warm on one half of the barbecue while we ate what was on our plates. I was hooked and trotted off to the garden centre the next day to buy a gas barbecue. What a choice! I finally decided on one with dual controls and a side burner and I've never looked back. I cook almost any meal on the barbecue now - at least when the weather is suitable. The heat is adjustable and the food can be moved from one side to another when it's cooked until people are ready to eat it, and at least it's cooked right through. With the charcoal variety, the coals take forever to heat up and then everything is cooked (or burned!) at once with no way of keeping it warm. Everyone ends up with a heap of burnt offerings all at once after waiting for hours for the barbecue to 'take' and is usually drunk by the time they get their food! To anyone who thinks that it isn't the same to use a gas barbecue - you're right, it isn't thank goodness!!
